Baked Potato Soup 

Dice one large white onion 

Melt 6 tablespoons butter in pot over medium heat.

Saute onions til soft and tender

Add two tablespoons flour and continue saute until it starts to brown

Add 4 cups chicken stock


Add 2 cups water

Wisk in 1/4 cup corn starch

Add 1 package potato flakes

(Use less for runnier soup)

Add around 1/2 a teaspoon of basil and salt and pepper to taste. 

Bring to boil and simmer on low for 5 minutes. Stirring frequently!

Dice up peeled baked potatoes and add them. I like to use 7-8 small potatoes or around 3-4 large potatoes.

Add one cup half and half

Simmer 15-20 minutes, stirring frequently. Then it's ready for toppings!

Customize each bowl! Add shredded cheddar cheese, ham, bacon, green onions or anything else that you like on baked potatoes!!
